So, I'm guessing not everyone immediately jumps on the chance to incorporate vegetables in to their cupcakes, but I'm odd like that. So when I saw the recipe for chocolate-beet cupcakes here , I just knew I had to make them. Not to mention I do love beets, and do love making cupcakes. Because I notice: people LOVE it when you give them food, especially pretty food.
Let me say this: these cupcakes are SO GOOD. All this pretty raspberry-color is au natural from the beets! The beets are also in the actual cake batter, and makes it ever-so moist. You can't even tell that beets are in them. I can prove that because even Scarlet ate them, loved them, and had no clue. And she's the biggest critic out there! My advice. Make these!
