I made one of my favorite potato concoctions the other night and thought I'd share it with you. These pototoes are super easy, colorful and yummy! Start with a small bag of Fingerling potatoes...
Thinly slice them lengthwise and add to a large bowl. Toss with the following:
3 chopped garlic cloves, 1/4 cup of chopped Italian parsley, 1/2 tsp red pepper flakes, salt, black pepper, and a 1/3 cup of extra virgin olive oil.
Roast in the oven on 400 degrees, (flipping once of twice) for about 30 minutes.
I served them with honey mustard chicken and homemade 6 bean salad.
